We have heard for years that breakfast is the most important meal of the day.
Why you may ask? Here are some of the best reasons to eat breakfast:
+lowers cholesterol
+aids in weight loss
+improves concentration
+boots metabolism
+prevents feelings feeling tired
+provides energy
+helps to keep meal portion size lower through out the day
+easier to lose weight
As if these reasons are not enough, now comes some new research that says, skipping breakfast may increase heart attack risk in men.
Is this true true?
Experts aren’t certain, but here’s what they think: People who don’t eat breakfast are more likely to be hungrier later in the day and eat larger meals. Those meals mean the body must process a larger amount of calories in a shorter amount of time. That can spike sugar levels in the blood and perhaps lead to clogged arteries. What This Really Means
The study was an observational study and therefore does not prove cause and effect. However, when such studies are well designed they may reveal important health information.

Why take a chance is my philosophy. That and I love breakfast foods.
As for me…….I never ever skip any meal or any chance for food.
AND DON’T FORGET: A high fat breakfast of bacon and eggs may be the best and healthiest way to start your day according to a recent study from the University of Alabama at Birmingham, England.
All of this gives me a good opening for today’s featured recipe……..
Featured Recipe Quick and Easy Breakfast
Don’t know what to call this recipe. I made it up many years ago during a snow storm. The roads were too bad to go out and eat. So I made do with some stuff in my fridge.
This is a great recipe for using up leftovers. On the other hand, you can also use any left over ingredients (the other half of the peppers and roll of sausage ) in other dishes or salads later in the week.
You can also change it in many different ways too. One you can use bacon instead of sausage. You can use spicy hot or for a real taste treat use maple syrup sausage. YUM! Today I used Sweet Italian sausage.
You can use any cheese that you like as well. I used left over Mozzarella cheese.
This recipe stretches a little food to feed four people. So at only $1.70 per person it is very cost effective too!
This is what you will need for 4 people:
½ pound bulk sausage
2-3 tablespoons olive oil
About 7 small mushrooms
1 – 20 ounce package fresh cubed hash browns
½ green pepper diced
½ red pepper diced*
Couple of handfuls of shredded Mozzarella cheese or your choice
Dried or fresh chives if you so desire.
*NOTE: Normally I just use green peppers, but in honor of Christmas and to make the dish look prettier for the camera, I used half a red pepper today too.
Here is what you do:
Wash and clean mushrooms (How to Clean Mushrooms) and peppers. Slice the mushrooms and cut the peppers into medium chunks.
Cook sausage in large skillet over medium heat breaking it up with a spoon until lightly browned. Remove from skillet and keep warm with foil.
Add some olive oil and heat over medium high heat. Add the potatoes and peppers.
Cover and cook for 8 to 10 minutes, turn the potatoes half way or until the potatoes are heated through and start to brown around the edges. Turn the potatoes at the 4 minute mark and add the mushrooms in too.
Stir the sausage back into the skillet to warm.
Remove from heat; top with the cheese. I also sprinkled on some dried chives from a good Twitter friend.
Serve with some eggs, fruit, and/or buttered toast.
